I love tamales. My life has been dotted with expert tamale makers–the Mexican version. Then I tried Guatemalan tamales. Oh my. The differences are subtle, but important. In Guatemalan tamales, the corn used to make the masa (dough) is not sweet, and they are usually wrapped in leaves, not corn husks. We all eat massive amounts of corn. Since my husband’s Celiac diagnosis, we are a gluten-free household, and it took a lot of work. But, now it is second nature and, really, no big deal. But corn? If I had to try to cut corn out of our diets, we would starve; it is in EVERYTHING. In 2012, the USDA claimed 88% of U.S. corn is GMO. I’m not okay with that, so we are planning an attempt to grow our own soon. Meanwhile, did you know that corn does excellent double duty as a trellis for growing peas? Can someone bring me a mango ice shave? I have been desperately trying not to whine about the heat, but you could stave off my whining with a shave ice. Really. Don’t bring me a snow cone; it isn’t the same thing. It is about the location of the syrup. In a shave ice/ice shave, the shaving creates a snow-like texture that absorbs the syrup. In a snow cone, the ice is crushed causing all the syrup to settle to the bottom. Don’t try a shave ice unless you are prepared to never eat a snow cone again. Really. Popping corn is an art. We consume bowls and bowls and bowls of popcorn at my house every night–organic, non-GMO cooked on the stove the same way it was done when I was little. As a matter of fact, I believe my craving for popcorn is actually triggered by sunset. I adore it toped by finely grated Parmesan & a sprinkle of chile powder. My husband craves it with huge doses of freshly ground black pepper. My son prefers it with just a sprinkle of sea salt. That’s our nighttime popcorn trifecta. Are you eating flowers? I do occasionally, but only when I can buy them directly from the grower or grow them myself due to pesticides. One of my favorite edible blooms, second only to zucchini blossoms, may be sweet violets. I like to make a simple syrup infused with violets then make a subtle glaze for sugar cookies or a vinegar for a salad of bitter greens. Mellow, slow-cooked flavors are not usually just a product of slow cooking. There are special ingredients that help meld flavors, that calm individual ingredients like onion into more flavorful combinations with other foods. Home-made broths are excellent, and even a quality Worcestershire sauce can make a stove-top dinner feel like a slow-cooked delicacy. My favorite is still sherry vinegar. It is the penultimate calming pan de-glaze much like the neutral density filter, for which this Call is titled, is the most under-appreciated photo filter. I know–segue, right? 🙂 Take a look…
