DARKER
the better

I usually like to get food as close to the source or source process as possible.  But, I cannot bring myself to love Mexican chocolate.  Most of the world uses a conche for varying lengths of time to incorporate cocoa butter within chocolate.  The longer the processing, the smoother the chocolate.  But Mexican chocolate is still often stone-ground which produces a gritty texture.  I am addicted to dark chocolate, but I want it smoooooth.  This next Call offers the opportunity for you to be dark and either smooth or gritty.  To each their own…

Check out of this Call for Entries from the Arc Studios & Gallery (San Francisco, CA) for Dark. Everyone needs to explore their dark side.  Here’s your chance…

Chia seeds are fascinating. I have started using them to make raw, small-batch refrigerator jam from overripe fruit.  Yum.  The seeds are hydrophilic, absorbing up to 12 times their weight in liquid when soaked. While soaking, the seeds develop a mucilaginous gel-like coating that gives my jam a fantastic texture.  I feel a little like a mad scientist every time I use them, ha.  Here’s a science (& art) call for the Chicago area.  Investigate…

Your mayonnaise is a great judge of character.  No, really, I haven’t lost my mind.  If you’re not vegan, and you hate mayonnaise, it is probably because you’ve never had anything but the homogenized, bland, store-bought variety.  Real mayonnaise, if fresh, is made of three simple ingredients: egg yolks, oil & acid.  I prefer farm-fresh eggs, olive oil and lemon.  The are hundreds of combinations each with their own quirks and complexities.  Mayo-making is an foodie’s artisan craft, and this next Call is a celebration of fine craft from basketry to furniture and everything in between.  Take a look…

CHICKY

When I was pregnant, I couldn’t eat anything that looked like a bird.  The smell of fresh-roasted chicken made me ill.  And, while I could eat a chicken nugget or bad, food-service breaded chicken patty, the mere sight of a drumstick would make me violently ill.  At the time, I worked behind the cheese counter at The Gourmet Shop–which was, and still is, famous for the hundreds of pounds of chicken salad they make & sell everyday.  That job didn’t last long.  This next Call IS NOT for roasted birds; I suspect they would prefer imagery of birds that are still very much alive.  Just sayin’…

I’ve been craving crêpes with fresh strawberries and vanilla creme for a week.  As much as I love French food, my patience for cooking is limited these days, and crêpe-making challenges the patience of most.  But, since strawberries that actually smell like strawberries are starting to show up at the market, I am going to try to distract my crêpe-craving taste buds with fresh strawberries.  Wish me luck.  In the meantime, I imagine the jurors for this next show are casually eating crepes during the curation of this show.  Take a look…
