FILTERED

Mellow, slow-cooked flavors are not usually just a product of slow cooking.  There are special ingredients that help meld flavors, that calm individual ingredients like onion into more flavorful combinations with other foods.  Home-made broths are excellent, and even a quality Worcestershire sauce can make a stove-top dinner feel like a slow-cooked delicacy.  My favorite is still sherry vinegar.  It is the penultimate calming pan de-glaze much like the neutral density filter, for which this Call is titled, is the most under-appreciated photo filter. I know–segue, right? 🙂  Take a look…

or not

It’s that time again. What would I be if I had to portray myself as food?  This week I choose kefir.  I am fascinated.  My new gluten-free regimen had increased my dairy intake, and my son has dairy sensitivities.  Enter milk kefir.  Kefir is simply milk that is fermented at room temperature with kefir grains for about 24 hours. It has many wonderful health benefits, a great flavor and is also usually tolerated well by the lactose intolerant.  I’ve been buying it commercially for $4 a quart, but now I’m going to make it myself.  Think of it as a self-portrait…

Fast food is fast, but I sometimes wonder about the food part. Like you, I am frequently too busy to cook or even shop for food for that matter. But, I have found a lazy alternative to fast food, the rotisserie chicken. In my version, I have it over romaine with a little Parmesan, a few croutons, Italian dressing and a couple of pepperoncini on the side. This next Call for Entries, also has a contingency plan for running out of time… the online entry. You have plenty of time until this deadline, but just in case
