CALL for ENTRIES: Paperworks

COOKING in paper

I dislike washing dishes, just like everyone else.  I have had a dishwasher for the past 10 years, but I still try to be conservative in usage.   But as of June 1, we are downsizing to an apartment that does not have a dishwasher.  And, while I will still avoid disposables, like paper plates, I am a strong advocate of cooking “en papillote”.  Not only is it a great way to produce tender, flavor-infused dishes, it also produces one less dirty dish.  This next Call also extols the praises of working with paper. Take a look…

CALL for ENTRIES: Expo 36

Learn more about Expo 36 from the b.j. spoke gallery!fast FARE

The freezer saves dinner about two days a week in my house.  We purposefully cook more portions than we can eat and save the leftovers.  It started out as a way to send lunch with my kiddo for school, but it has become a dinner rescue regularly.  When you get busy and have forgotten to plan for dinner and live nearly a half hour from the closest grocery or restaurant, you’re grateful for frozen leftovers.  This next Call is not a leftover or frozen, but I did neglect to plan the publication more than a few days out from the deadline.  Sorry about that…

BAKED GOODS

I have produced my fair share of leaded pastries–from puck-like biscuits to unintentionally unleavened breads.  I thought it was just me, but I found out that part of the problem was my oven.  if your baking powder doesn’t full work until 425°, and your oven lacks the last 50º because it isn’t calibrated correctly, then you’re going to fail. It doesn’t matter if your oven is 25 years or 5 days old; a digital oven thermometer can save your baking. Trust me.  This next Call offers a little more digital magic.  Take a look…

What food helps you get to sleep quickly? Well, honestly, almost any food helps me sleep because I am usually so exhausted that I can fall sleep after eating virtually anything.  The idea of warm milk is pretty nauseating, and I’ve never developed a taste for hot tea, either.   I have friends that swear by melatonin supplements, and a few that are addicted to over-the-counter PM drugs.  Those drugs give me a hangover, and melatonin just doesn’t do anything for me.  Luckily my days of insomnia seem to be over.  So I have a request of you… don’t doze off while reading this next Call (a repost) because the deadline is almost here for the New York show.  Take a look…
