While most of the world is obsessed with pumpkin-flavor, not actual pumpkin, I am reveling in the other winter squashes — butternut, acorn & patty pan. My farmers market sells these squash, in season, for $1 each. Split & roast one of each squash, scoop out the insides and puree through the food processor, add a little salt, pepper, garlic and a touch of curry or a few red pepper flakes, and the resulting squash soup is divine. It looks like baby food, but the flavor is unbelievable. I makes lunch for all three of us for at least two or three days. Squash, just squash. It’s a solo act, just like this next Call.
